做法:
1. | 小魚干沖洗乾淨後用紙巾擦乾,再噴上些許油。然後放進氣炸鍋用350˚F(175˚C)炸8分鐘,中途要拿出來攪拌一下。如果沒有氣炸鍋,則在炒鍋加入2大匙油燒熱後放進小魚干用中火炒酥。 |
2. | 依照炒飯基本準備好材料。 |
3. | 3大匙油在炒鍋裡燒熱後加入蛋炒碎。倒入米飯繼續炒到蛋呈金黃色而飯米粒都鬆散開來,然後加入鹽和胡椒調味。 |
4. | 最後再拌入蔥花和小魚干拌炒1分鐘即可。 |
PROCEDURE:
1. | Rinse the dried anchovies under running water. Pat the anchovies dry with paper towels. Spray little oil on the anchovies and cook in an air fryer over 350˚F(175˚C) for 8 minutes - stirring in the half way. If you don't have an air fryer, heat 2 tbs. of oil in a wok. Add the dried anchovies and stir-fry over medium heat until crispy. |
2. | Follow the instruction of "Fried Rice Basics" to prepare the ingredients. |
3. | Heat 3 tbs. of oil in a wok until very hot then add the beaten egg and scramble. Place in the rice and stir until the egg is golden brown and the rice is loose without any clumps. Mix in the salt and pepper for seasoning. |
4. | At last add the anchovies and scallion. Stir-fry until all the ingredients are heated through. |
